Fresh Pasta:Pasta in a Vodka Pancetta Sauce

Cooking the vodka for exactly the right amount of time is the secret to this sensuous sauce. By cooking it no less than two minutes and no more than three, the harsh taste of high proof alcohol disappears--leaving only the spectacular "take your breath away" flavors this dish is known for.
Sauce
1/2 tablespoon olive oil
4 ounces pancetta, cut into 1/4 dice (see Tips below)
2 tomatoes, peeled and finely diced
1/2 teaspoon salt
6 "pencil-sized" green onions, sliced diagonally into 3/4" pieces (both white and green parts)
1/2 cup vodka
1/2 cup freshly grated Parmesan freshly ground black pepper, to taste
Pasta
1 pound fettuccine or other pasta of your choice
Advance Preparation:20 minutes
1. Prepare pancetta and vegetables as specified.
Final Preparation:30 minutes
1. Heat olive oil in a large skillet or stir-fry pan over medium heat. Add pancetta and saute until golden and slightly crunchy, about 5-7 minutes. Add tomatoes and salt. Heat through.
2. Meanwhile, cook pasta in plenty of rapidly boiling salted water until al dente.
3. About five minutes before pasta is done, add green onions and vodka to sauce. Bring to a simmer and cook 2-3 minutes only, stirring frequently.
4. Add cooked pasta, still slightly dripping, directly to sauce. Toss gently but thoroughly and heat through one minute. Serve immediately, sprinkling on Parmesan and black pepper to taste at the table.

Tip: Pancetta
Pancetta is a highly-seasoned, unsmoked, traditional Italian bacon. Unlike American bacon, which is usually sold pre-sliced in slabs, pancetta is typically sold rolled up like a jelly roll. It is available in gourmet shops or Italian delis. If it's not already sliced, ask the butcher to slice it into 1/4" pieces (which will make it easier for you to dice for this recipe.) You will only need 2-3 slices. If you must buy a larger quantity, pancetta freezes very well. Wrap up pre-sliced individual recipe portions in plastic wrap and store in freezer bags. If pancetta is not available substitute the highest quality bacon that you can find.
