Flavor Infused Olive Oils:Spicy Salsa and Guacamole

This salsa can also be turned into a chunky guacamole with the addition of a chopped ripe avocado.
Salsa
pepper/garlic olive oil
tomatoes
green or red onions
fresh cilantro
lime juice
avocado (optional)
Preparation:20 minutes
1. In a mixing bowl combine 2-3 diced tomatoes, 1/2 cup finely chopped onions and a handful of finely chopped cilantro. Salt to taste if desired.
2. Add the juice of one fresh lime and toss.
3. Drizzle in 2-3 tablespoons pepper/garlic olive oil and toss again.
